4. Don't dice the potatoes

Dicing potatoes into small chunks reduces cooking time, but also exposes more surface area to vitamin destruction. If you must cut, slice them into bigger cubes. Better yet, cook them with the skin unpeeled -- most of the nutrients in potatoes are near the surface, so leaving the skin preserves the nutrients.
